Ingredients:
1 kg fish;
4 onions;
2-3 carrots;
1 celery root;
2 coffee cups oil;
2 tomatoes;
6-7 cloves of garlic;
black pepper;
pinch of thyme;
1 coffee cup white wine;
½ lemon;
2 tablespoons chopped parsley;
salt.
Preparation:
- Chop the onions, the carrots and the celery.
- Put them in a pan and stew them in oil.
- Add 2 grated tomatoes, chopped garlic cloves, black pepper and thyme and salt.
- Put the trout in slices or in pieces which are rolled in flour to a baking pan and add the wine and 1 tea cup warm water.
- Put lemon slices over the fish and the stewed vegetables.
- Sprinkle with parsley and oil and bake in moderate oven.
